Succulent hickory marinated pork in a Kentish cider sauce, topped with sage potatoes, roast apple and crumbs of pork crackling. We create the sauce by firstly saut??ing onions, garlic puree and mustards before adding in the cream, herbs and a dash of Kentish dry cider towards the end. We top our sauce with chunks of roasted apple and diced potato which has been tumbled and roasted in oil with sage. Finished with a hand sprinkling of pork crackling crumb.
